Annemarie at Gen X Quilters is putting on a Virtual Summer Fair. You can enter a quilt and a recipe. It's fun to have an on line fair to participate in as our State Fair was cancelled this year due to the wide spread flooding in my state.
THE QUILT
My quilt submission is my Row By Row Robin which was made with a forum group I once belonged to. Instead of putting it together in the traditional row by row method, I hopped onto my trusty EQ and designed this layout instead:
Here is the back:
The quilt is about 50% hand pieced (I unfortunately had to unsew and remake some blocks) and is hand quilted. This is the first quilt in 20 years of quilting that I have kept :0)
THE RECIPE
This is our favorite summer recipe. It's a recipe from the Sargento Cheese folks:
3 T olive oil divided
1 lb large shrimp deveined (or chicken breast)
2 small zucchini, sliced 1/4" thick (we know what a 1/4" is)
3 plum tomatoes, chopped
1 c frozen peas (or broccoli, or fresh spinach)
1 T chopped fresh basil or 1 t dried
4 oz egg and 4 oz spinach fettuccine, cooked al dente
1 1/2 c Shredded Parmesan Cheese
Get your fettuccine started before stir frying!!
In large skillet, heat 1 T oil over medium-high heat. Add shrimp(chicken) and garlic; stir fry 3 minutes or until cooked through. Remove from skillet; set aside. Add 1 T oil and zucchini (and any other vegie you want) to skillet; stir fry until crisp tender. Add tomatoes, frozen peas (or fresh spinache) and basil; stir fry 1 minute. Return shrimp to skillet; stir fry 1 minute. Drain fettuccine; toss with remaining 1 T oil and 1 c parmesan cheese. Top with shrimp mixture; sprinkle remain cheese on top and serve.
I hope you enjoy this recipe. It's like eating a warm fresh salad :0)
Run on over and enter your favorite quilt and recipe :0)
